Formula method
In baker's percentage, total flour is always 100%. Every other ingredient is shown as a percentage of that flour weight.
ingredient % = ingredient weight / total flour weight * 100This makes dough formulas portable. If hydration is 72%, salt is 2%, and prefermented flour is 20%, those relationships remain clear even when the batch size changes.
Worked example
Example formula: 1000g flour, 720g water, 20g salt, and 2g yeast.

Multiple flours
If a formula uses bread flour, whole wheat, rye, or prefermented flour, the flour weights are combined first. That combined flour weight is the 100% base.
For example, 800g bread flour plus 200g whole wheat flour equals 1000g total flour. The bread flour is 80%, the whole wheat flour is 20%, and every non-flour ingredient is calculated against the same 1000g base.
Scaling formulas
Once a formula is expressed in baker's percentages, scaling is controlled by total flour weight or target yield. The ingredient relationships stay the same while the batch gets larger or smaller.
